Brisket is a fatty cut from the breast area of the animal. It is economical and full of flavour  and when cooked long and slow  the fat melts away to give a delicious, tender result.
I have included a traditional slow cooked hotpot  recipe and Brian Turner's interesting use of brisket which is done in two stages but is well worth the effort
